Oysters: The oysters we offer are pacific (rock oysters), which are available all year round and graded accordingly

Small: 2.5 inches - 60 grams to 70 grams each.
Standard: 3 to 3.5 inches - 70 to 90 gms.
Medium: 3.5 to 4.5 inches - 90 to 130 gms.
Large: 4.5 to 5.5 inches - 130 to 200 gms.
Jumbo: 5.5 inches plus - 200 gms plus.
 

Razorfish: Razorfish are of the Ensis species are graded according to size. The supply of Razorfish is seasonal and is generally between the months of March and September.

Small: Up to 6 inches.
Medium: 6 to 7.5 inches.
Large: 7.5 inches plus.

Sandgapers: The Sandgaper is of the Mya species, and like the Razorfish
Is generally caught seasonally between the months of March and September. The size of the Sandgaper can vary however generally there are between 3 to 5 pieces per kilogram.
