For over 2000 years the oyster has stimulated the imagination. Far back into their history oysters have been regarded as the food of love and romance. In Ancient times the Greeks ate them hot simmered in honey. It is a unique sensation that only the oyster is able to provide, capturing the very essence of the sea. Naturally modest, it can be enjoyed traditionally with fresh bread and butter or with a twist of lemon, but it also lends itself to numerous savoury recipes.
Taking three to four years of patience and meticulous work, the oyster culturist applies traditional knowledge and experience, allied to the boundless and fragile riches of the sea to produce above all else, a natural and traditional product.

A traditional product above all else, the oyster is, however one of the most modern and natural foods there are, simply because it provides the perfect answer to the dietary demands of today.
The oyster is low in calories, around 70 Kcal per 100 grams. In spite of this it provides us with important proteins and numerous elements very useful to the body; mineral salts, vitamins C, B1 and B2 (all helps against fatigue and aids resistance to infection whilst helping to reinforce the metabolism). Contrary to that there are very few lipids in the oyster.
